Sweet and Spicy Raw Carrot Salad
This simple carrot salad packs a flavorful punch thanks to a generous helping of sweet chili sauce and a dash of lime juice. It’s my personal take on the viral apple cider raw carrot salad you’ve probably seen floating around on Tik Tok, and I’m certain it’s going to become your new favorite side dish.
It’s just three ingredients (four if you count, but not really all that optional cilantro) and comes together in just a few minutes; what more could you want? Even better, it stores incredibly well thanks to the citrus from the lime. In fact, each Sunday I prep a large batch and then eat it throughout the week as a quick-fix snack or with a side of rice for a tasty lunch. To make it even more special, play around with different types of rainbow carrots for a striking dish that’s as beautiful as it is delicious.
Ingredients
- 4 large carrots
- 2 tablespoons of sweet chili sauce (I use Mae Ploy brand)
- juice of half of a lime
- cilantro, for garnish
Directions
- Wash your carrots, and then use a potato peeler or mandolin to dispose the outer layer. In a large bowl, carefully make ribbons out of the carrots.
- Add your sweet chili sauce and the juice of half a lime to your carrots. Mix together thoroughly, garnish with cilantro.
